The Food

The dance of the chef should be watched with an appreciation for its rhythm and timing. Every step leads into another, moving precisely in every direction. Chopping, mixing, flipping, tossing, and reaching. It is all about the balance and flow. I could not do his job or take that kind of pressure, but the drama excited me. It was an arena in which you could absorb lessons and use the energy at home to reinvent yourself. In my kitchen, I could be the chef, the staff, and the star for my loved ones and friends. My joy was not in making a name for myself, but from doing what I love well. This is exactly what I took from Italy. I could study cooking until I'm old and there would still be more to learn.
